Banana Bread

A quick and easy Banana Bread recipe, perfect for school lunchboxes and morning tea treats!

Ingredients
  1. half cup unsalted butter
  2. half cup sugar (can be either castor, plain or raw)
  3. two free range eggs
  4. 2 ripe bananas mashed - they can be REALLY ripe aka brown
  5. one and a half cup self raising flour
  6. one teaspoon vanilla essence
  7. one pinch of salt
Instructions
  1. Preheat oven to 180 deg C.
  2. Line a loaf tin with baking paper.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs and beat again until well combined.
  5. Stir in bananas, vanilla, salt and flour. Mix until well combined.
  6. Pour mixture into tin and bake for 45 min.
  7. Test the top of the loaf to make sure it bounces back - a sure sign it's cooked enough!
Notes
  1. For a treat add some sliced bananas to the top and press into your batter! Drizzle over extra sugar to caramalise.

    Scrumptious recipe tash. Mr’s nieces helped me, was super easy and fun for the kids to join in and help make afternoon tea. Yummo.
